This rich, decadent cake has my personal twist on a traditional Sicilian dessert. It is made of three layers of "pan di Spagna" - italian sponge cake- wet with rum flavored extract, filled in with a sweet, smoth ricotta cream, chocolate chips, pistacho crumbs and diced candied orange peels; then covered with a layer of ricotta filling. Outstanding!
