In Italian culture, the mimosa flower is designated as symbolic of women, and so Torta Mimosa is Women's Day celebratory cake. A truly exqusite, elegant and delicate dessert, made of three layers of Italian sponge cake enclosing a delicious Diplomat cream and covered with a dome of crumbled cake bits as to resemble the mimosa flower.  Excellent.
